Temperature
Wine experts agree that two of the most important factors in wine storage are the temperature and temperature consistency. This is why we have created a wine cellar where temperature and relative humidity are maintained at a stable level with the help from our dual top-of-the-line air handlers and back up generator.
Our system is specially engineered to assure a constant temperature on the hottest and most humid days. Also, the system is designed to provide excellent air circulation and assures an even temperature distribution throughout the cellar.
Each air handler is equipped with two temperature and humidity sensors that feed information to the thermostat which in turn controls each air handler to ensure the temperature is kept between 55-65 degrees. As a result, the redundant air handling systems back each other up in the rare event one fails.
In the event of a power loss to the entire building, a 25 KW diesel back up generator is triggered to supply power to the condensing units and dual air handlers.
Light & Vibration
There are no windows inside the wine cellars to allow ultraviolet light in that may give wine an unpleasant aroma and disrupt the aging process. Also, the low output incandescent lights inside the cellar are on a timer, so they will never remain on when no one is inside the wine cellar.
Our entire building is constructed out of concrete and steel to make it a near vibration free structure. Vibration disturbs a wine’s sediment and can be harmful to all wine.
Security
Each individual wine locker is partitioned with steel or metal instead of plywood. Each locker also has its own security alarm disarmed by your personal access code and comes equipped with a high security cylinder lock for which you hold the only key.
The access into our building and wine cellar is computerized, providing a written record of the entrance and exit times related to all access activity. Access hours are every day of the year from 5:00 am - 10:00 pm. If you need more time, just ask your storage consultant.
Video cameras monitor and record key points in and around the wine cellar for your safety. The entire building is protected by a state-of-the-art fire monitoring and suppression system.
Many of our storage centers offer drive in air conditioned loading and unloading of your wine, so that you are out of the weather in a safe comfortable building.
Environmental Monitoring
The cellar’s temperature and humidity are monitored and controlled by a touch screen system in the rental office. Incorporated into this system is a software package that automatically logs on a file the temperature and humidity of the cellar multiple times per day for our records. We keep these records for your perusal at any time.
Different types of wine have various temperatures and humidity levels that make for optimal aging. A majority of wine ages best when kept at a temperature at or above 55 and at or below 65 degrees Fahrenheit. Desert Wine Cellars strives to keep the wine room within this temperature range.
